Instant Mini Pizza Crust (Microwave!!)

This recipe is adapted from an English Muffin recipe I found on SCDfoodie.com. This is by far the easiest and fastest SCD Bread recipe I have come across so far. If you are in a hurry and want pizza and hardly any mess, make this one! This SCD Pizza Dough/Crust is Gluten free, dairy free, lactose free, yeast free, additive free, and refined sugar free.


1/3 Cup Almond Meal
1 Tbsp Coconut Flour
1/4 tsp Salt
1/4 tsp Baking Soda
1/2 tsp Italian Seasoning
1/4 Cup Shredded Parmesan
1 Egg
1 tsp Olive Oil
2 Tbsp Water
Coconut Oil for greasing ramekin
1 Can Hunt's Crushed Tomatoes for sauce (or blend a can of diced tomatoes)
Provolone cheese slices
Favorite Toppings

Mix wet and dry ingredients in separate bowls.
Combine wet and dry ingredients.
Grease the ramekin and evenly spread mixture into the dish.
Microwave for 2 minutes.
Once cooled slice into 4 thin discs.
Top each one with a can of crushed tomatoes, provolone cheese, and your favorite toppings.
Melt under broiler and serve.

Cauliflower Pizza Dough

This is by far my favorite SCD Pizza Dough. The cauliflower flavor goes so well with the Italian herbs and pizza flavor. The only difference in a regular pizza is the dough tends to be soggy no matter how much liquid you squeeze out. Still SUPER delicious though. This SCD Cauliflower Pizza Dough is Gluten-free, Grain Free, Yeast Free, and refined sugar free.


1 Head Cauliflower
1 Cup Shredded Parmesan (Shred your own! Pre-shredded has potato starch)
3 Eggs
1/2 TBSP Oregano
1 tsp Salt

Preheat Oven to 415*
Pulse Cauliflower in food processor until rice-like consistency achieved. (Do in batches so you don't overfill the appliance.)

Squeeze out excess liquid from riced cauliflower with paper towels or cheesecloth.
Combine all ingredients and then spread onto a parchment lined cookie sheet. (You will need to flip the dough so don't make it too big to do that.)
Bake for 20-30 minutes until bottom starts to brown, then flip and top with desired ingredients. Bake Pizza for 15-25 minutes until cheeses and toppings are done. Enjoy :)

Creamy Garlic Pizza Sauce

Tastes just like the pizza place white sauce pizzas ;)

1/2 Cup homemade SCD yogurt
1/2 Cup homemade SCD mayo
2    Tbsp minced garlic

Combine mayo and yogurt and spread on pizza crust. Take pinches of the minced garlic in your fingertips and flick it all over the white sauce. Top with your favorite cheese and toppings. For this sauce I prefer Artichoke hearts, chicken, bacon, tomatoes, onions, spinach topped on provolone sprinkled with Parmesan. Yum.

Pizza Dough

After trying multiple SCD pizza recipes I discovered that mixing the nut flours really seem to balance the flavor nicely! My husband said this tasted just like "real" pizza dough. He did say the texture is a little different but doesnt matter to him. My 3 year old loves it ;) This SCD Pizza Dough Gluten-free, Grain Free, Yeast Free, refined sugar free, and lactose free.

1       Cup Almond Flour
1/4    Cup Coconut Flour
1/4    Cup Cashew Flour (Grind or blend raw, unsalted cashews)
3        Eggs
1/2    Cup Parmesian
2       Tbsp Oil
1/2 Tbsp Garlic Powder
1 Tbsp Oregano



Preheat Oven to 400*.
Mix all ingredients to for a paste like texture.
Spread thin on a parchment paper lined cookie sheet.
I like to make little individual size pizzas but you can make it whatever size or shape you want :)
Bake for about 8-10 minutes and then take out of oven.
Flip your pizza/pizzas and sauce em and top em.
For red sauce I use crushed tomatoes with Italian seasoning and salt, and Creamy Garlic Sauce for white sauce. Bake for an additional 10-15 minutes or until cheese is melted and enjoy!
