Quick and easy side dish that even the kiddos will love. An easy spin off of Potato Salad and it's even better the next day!
1 Head Cauliflower, chopped
1/2 Red Onion, minced
2 Sticks Celery, minced
2 Egg, diced
1 Cup SCD Yogurt
1 Cup SCD Mayonnaise
1/2 tsp Salt (I actually use 1 tsp but start with 1/2 and go from there)
1 TBSP Mustard
Take stem and leaves off of Cauliflower head and discard or save for soup. Chop Cauliflower into bite size pieces and boil. I boil them for about 30 minutes because I like mine soft, check throughout until it reaches the tenderness you desire.
While cauliflower is cooking Mince onions, celery, and dice eggs and add them plus all remaining ingredients into bowl and mix until combined well. Once Cauliflower is cooked fold it into the mixture and let sit 10 minutes before serving so flavors can melt nicely together. Be sure to add any of your favorite herbs or seasonings to your taste :) Enjoy.

Cauliflower "White Rice"
The BEST Rice substitution ever! You can hardly even tell the difference. This is SCD Cauliflower "White Rice" which is Gluten Free, Grain Free, Refined Sugar Free, and Lactose Free.
1 Head Cauliflower, break down to florets.
Parchment Paper
Salt & Pepper to taste
Preheat Oven to 375*
Cut down the head of Cauliflower into florets and pulse until rice consistency in food processor.
(Do in batches)
Line a cookie sheet with parchment paper and sprinkle a layer of the cauli-rice onto it.
Bake for about 30 minutes or until just starting to brown on the just the tips in various places.
