Mayonnaise, Cooked

Best Mayonnaise recipe I have come across AND it's 100% safe because the eggs are not raw (even though chance of an egg being contaminated is VERY slim). I don't know who to give credit for this recipe to because I have found it quite a few places all over the internet. So, just know this is a super popular recipe and it is for a reason! It's great and tastes JUST like the real thing =D SCD Mayonnaise

4 Egg Yolks
4 Tbsp Water
4 Tbsp White Vinager
1 tsp Salt
2 tsp Dry Mustard
2 Cups Canola Oil

Put all ingredients except for oil into a saute pan on medium-low.
Blend all ingredients and constantly move the mixture around with a spatula until the mixture begins to thicken almost to an over easy egg yolk consistency.
Quickly transfer mixture to a bowl or blender to stop the cooking process (I prefer using hand mixer for mayo)
Mix on high and SLOWLY poor Oil in until done.
Store in an airtight container.

Just wondering about this Mayo tho - is it normal for it to be really runny and yellow at first? Wondering if I did something wrong? I'm hoping to try your stuffed Zucchini recipe for dinner tonight! :)
