Roasted Cauliflower Jumbalaya

Another great substitute recipe using Cauliflower!


1 Head Cauliflower, Riced (or 1 lb frozen Cauliflower, riced)
1 Can Diced Tomatoes
1 Onion
1 Kielbasa (Use chicken if you can't find legal Kielbasa, ill put brand next time I buy it)
Salt & Pepper to taste

Preheat oven to 400*
Spread an even layer of the riced Cauliflower on a cookie sheet
Roast for 30 minutes
Take cookie sheet out and add diced tomatoes and Onion, mix well and roast for another 30 minutes
Once roasted add bite size pieces of kielbasa and roast for another 10 mminutes.
Season with salt & pepper and serve.

Caulifower Rice Sushi

Ok, so this is a slam dunk. I ran accross a recipe from JustEatRealFood for sushi made out of cauliflower rice and just had to try it. I am glad I did because holy cow! There is no difference in taste. My husband requests this now every time I ask what he wants for dinner lol. Great quick and easy meal! This Cauliflower Rice Sushi is gluten free, grain free, lactose free, and refined sugar free.



1 Head Cauliflower (or 1 lb frozen Cauliflower)
5 Nori Rolls
3 Cans Crab meat (or fresh, whatever you can afford)
10 strips of Cucumber
2 Avocados, 2 slices per roll
Teriyaki Sauce (I like sushi with this but can just use Tamari Soy Sauce)
Wasabi
Ginger

Rice the Cauliflower and spread on a cookie sheet lined with parchment paper.
Roast Cauliflower rice at 400* for about 30 minutes, flip rice and roast another 20-30 minutes.
Squeeze excess liquid out of Cauli rice with towel or cheese cloth, you want no liquid in rice.
Take a square of plastic wrap and lay Nori roll on plastic wrap.
spoon Cauli Rice onto wrapper and spread in a thin even layer.
Layer cucumber, crab, and avocado in center of roll.
Lift plastic wrap closest to you and slowly roll sushi roll into a log while keeping contents in place.
Slice each roll very slowly with very sharp knife or serrated edge.
Serve

Instant Mini Pizza Crust (Microwave!!)

This recipe is adapted from an English Muffin recipe I found on SCDfoodie.com. This is by far the easiest and fastest SCD Bread recipe I have come across so far. If you are in a hurry and want pizza and hardly any mess, make this one! This SCD Pizza Dough/Crust is Gluten free, dairy free, lactose free, yeast free, additive free, and refined sugar free.


1/3 Cup Almond Meal
1 Tbsp Coconut Flour
1/4 tsp Salt
1/4 tsp Baking Soda
1/2 tsp Italian Seasoning
1/4 Cup Shredded Parmesan
1 Egg
1 tsp Olive Oil
2 Tbsp Water
Coconut Oil for greasing ramekin
1 Can Hunt's Crushed Tomatoes for sauce (or blend a can of diced tomatoes)
Provolone cheese slices
Favorite Toppings

Mix wet and dry ingredients in separate bowls.
Combine wet and dry ingredients.
Grease the ramekin and evenly spread mixture into the dish.
Microwave for 2 minutes.
Once cooled slice into 4 thin discs.
Top each one with a can of crushed tomatoes, provolone cheese, and your favorite toppings.
Melt under broiler and serve.

Bratwurst & Peppers with Fried Eggs

I finally found a legal Bratwurst, yay! Just a little quick and easy dish I wanted to share for meal ideas.


2 lbs Wholefoods Pork Bratwurst
1 Red Pepper
1 Yellow Pepper
1 Orange Pepper
1 Red Onion
2-4 Tbsp Olive Oil for Brats
1/4 Cup Olive Oil
Salt & Pepper to taste
Serve with Fried Egg

Boil Bratwurst for 12-14 minutes. (I actually recommend using and non stick pot or deep saute pan to minimize dishes.)
While Brats are boiling slice and saute veggies in olive oil on medium-high heat, Salt & pepper to taste.
Drain the Bratwurst and add the olive oil.
Brown the Bratwurst on medium heat until browned on all sides.
Once Peppers and Onions are sauteed to you desired tenderness serve on Brats with a Fried Egg.
It's so yummy, the combination just works! Enjoy :)

Blueberry Lemon Muffins

Fruit Loops!!!! These muffins taste EXACTLY like that cereal Fruit Loops lol. I miss those sooooooo much. I found this tasty recipe from TheTastyAlternative.com. These SCD Lemon Blueberry Muffins are Gluten free, grain free, lactose free and sweetened with honey.


1 1/2 Cups Almond Meal
2 Tbsp Coconut Flour
1/4 tsp Salt
1/2 tsp Baking Soda
3 Eggs, 2 whole eggs, 1 white
1 1/2 tsp Vanilla Extract
1/4 tsp Lemon Juice
1 tsp Lemon Zest
1/4 Cup Coconut Oil
1/4 Honey
1 Cup Blueberries

Preheat Oven to 350*
Combine all Dry Ingredients minus the Coconut Flour
Combine all wet ingredients in a seperate bowl.
Mix wet and dry ingredients together.
Add Coconut Flour 1 Tbsp at a time to thicken to cake batter consisitency
Once batter is combined fold in blueberries (Don't put extra! That's what I did and they turned out too soggy but delicious!)
Fill muffins 3/4 full and bake for 12-15 minutes.

Chicken Teryaki w/ Cauliflower Rice

I just adore Cauliflower rice! It really makes a meal like this easily SCD substitutable without realizing you are not eating the "real" thing. This SCD Chicken Teriyaki with Cauliflower Rice is Gluten free, grain free, refined sugar free, made with gluten free Tamari (soy), and sweetened with honey.


4-5 Boneless Skinless Chicken Breasts, diced
Salt & Pepper
2 Tbsp Olive Oil
1 lb of your favorite stir fry veggies (fresh or frozen)
Fresh Pineapple Chunks
Cauliflower Rice
SCD Teriyaki Sauce 

Season and Saute diced Chicken Breasts in oil in a saute pan on medium heat.
Set aside meat and add Frozen veggies and 1/2 Cup of Teriyaki Sauce to Pan.
Once veggies are cooked add cooked chicken and mix well.
Serve over Cauliflower Rice with extra Teriyaki sauce on the side.

Banana Bread

Yummy Banana Bread Recipe from Comfybelly.com. Super moist, sweet, dense and delicious! I added an extra banana and some raisins. This SCD Banana Bread is Gluten free, grain free, yeast free, lactose free, and sweetened with honey.


3/4 Cup Almond Meal/Flour
1/4 Cup Coconut Flour
3/4 tsp Baking Soda
1/2 tsp Salt
1/2 tsp Cinnamon
2-3 Ripe Bananas, mashed ( I used 3)
3 Eggs
2 Tbsp Olive Oil
1/4 Cup Honey
1/4 Cup Raisins
Add some pecans or walnuts too if you want.

Preheat Oven to 350*
Line a Loaf pan with parchment paper
Combine the dry ingredients in one bowl and the wet in another, mix well
Add Raisins to batter
Poor batter into loaf pan
Bake for 40-50 minutes
