SCD Fried Catfish

Who says you can't have breaded, fried foods if your Gluten-free? Not me. Almond flour/meal makes a great flour substitute! This SCD Fried Cat fish is Gluten-free, and Grain Free.

2 Catfish fillets, cut into large pieces.
2 Eggs
1 Cup Almond Meal (You can use almond flour but I prefer the meal because it's cheaper)
Salt & Pepper
1 Lemon, + zest
1/2 Cup Canola Oil

Heat oil in a frying skillet to medium-high.
Set up an assembly line, beaten eggs in one dish, Almond Meal in another.
Season each piece of fish with salt, pepper and lemon zest.
Dip each piece of fish in the egg batter, then coat in Almond meal, then set into frying pan.
Fry about 4 minutes on each side depending on the thickness. (Fillet will be firm when done)
Serve with honey mustard sauce or SCD Mayonnaise and squeezed lemon juice.
