Bacon & Egg Cups

I will never eat anything else for breakfast ever again! lol These are amazing. The bacon juices melt into the egg and are out of this world. They are also very easy, our 11 year old makes them all the time by herself. Got this general idea from Pinterest. Love it. SCD Bacon and Eggs.


12 Strips of Bacon
6 Eggs for scrambled, 12 for over easy
Shredded Cheese
Optional: Sauteed Mushrooms, Onions, Cheese, Spinach. etc....

Preheat Oven to 350*
Line Muffin Pan with Bacon in each individual cup.
Beat the eggs and fill cups 1/2 way if you are adding ingredients and 3/4 the way if you are not adding ingredients. Cheese is added in the last 2 minutes.
Bake 30 minutes and add shredded cheese on top of scrambled ones the last 2 minutes of baking.
Enjoy!!
*For over easy put the bacon cups in for 15 minutes, then crack the egg into each cup and bake additional 15 minutes.I originally did these just like the scrambled ones for the full 30 minutes but the yolk was too done. So, I am ASSUMING this method will work :) A little worried that the bacon might mess up a little bit in the first 15 minutes before you add the egg but I doubt it. Let me know if you have any problems!
