Fruit Loops!!!! These muffins taste EXACTLY like that cereal Fruit Loops lol. I miss those sooooooo much. I found this tasty recipe from TheTastyAlternative.com. These SCD Lemon Blueberry Muffins are Gluten free, grain free, lactose free and sweetened with honey.
1 1/2 Cups Almond Meal
2 Tbsp Coconut Flour
1/4 tsp Salt
1/2 tsp Baking Soda
3 Eggs, 2 whole eggs, 1 white
1 1/2 tsp Vanilla Extract
1/4 tsp Lemon Juice
1 tsp Lemon Zest
1/4 Cup Coconut Oil
1/4 Honey
1 Cup Blueberries
Preheat Oven to 350*
Combine all Dry Ingredients minus the Coconut Flour
Combine all wet ingredients in a seperate bowl.
Mix wet and dry ingredients together.
Add Coconut Flour 1 Tbsp at a time to thicken to cake batter consisitency
Once batter is combined fold in blueberries (Don't put extra! That's what I did and they turned out too soggy but delicious!)
Fill muffins 3/4 full and bake for 12-15 minutes.

Thanks for the recipe!!! I just baked these muffins and you're right - they do taste like Fruit Loops! These have a great cake-like consistency, rather than moist and mealy. Thanks again! I will be baking these often.
