Caulifower Rice Sushi

After intro diet you can add certain things like Tamari (gluten free soy sauce) or coconut aminos to see if your body can tolerate them.

Ok, so this is a slam dunk. I ran accross a recipe from JustEatRealFood for sushi made out of cauliflower rice and just had to try it. I am glad I did because holy cow! There is no difference in taste. Great quick and easy meal! This Cauliflower Rice Sushi is gluten free, grain free, lactose free, and refined sugar free.



1 Head Cauliflower (or 1 lb frozen Cauliflower)
5 Nori Rolls
3 Cans Crab meat (or fresh, whatever you can afford)
10 strips of Cucumber
2 Avocados, 2 slices per roll
Wasabi
Ginger
Tamari or coconut aminos, honey, and vinegar for a dip, see SCD Teriyaki Sauce.

Rice the Cauliflower and spread on a cookie sheet lined with parchment paper.
Roast Cauliflower rice at 400* for about 30 minutes, flip rice and roast another 20-30 minutes.
Squeeze excess liquid out of Cauli rice with towel or cheese cloth, you want no liquid in rice.
Take a square of plastic wrap and lay Nori roll on plastic wrap.
spoon Cauli Rice onto wrapper and spread in a thin even layer.
Layer cucumber, crab, and avocado in center of roll.
Lift plastic wrap closest to you and slowly roll sushi roll into a log while keeping contents in place.
Slice each roll very slowly with very sharp knife or serrated edge.
Serve
