Roasted Cauliflower Jumbalaya

Another great substitute recipe using Cauliflower! **This recipe needs work on the seasoning but it has potential! It's just kinda bland. Experiment and comment your tasty results!**



1 Head Cauliflower, Riced (or 1 lb frozen Cauliflower, riced)
1 Can Diced Tomatoes
1 Onion
1 Kielbasa (Use chicken if you can't find legal Kielbasa, ill put brand next time I buy it)
Salt & Pepper to taste

Preheat oven to 400*
Spread an even layer of the riced Cauliflower on a cookie sheet
Roast for 30 minutes
Take cookie sheet out and add diced tomatoes and Onion, mix well and roast for another 30 minutes
Once roasted add bite size pieces of kielbasa and roast for another 10 mminutes.
Season with salt & pepper and serve.
