One Pan Meal!
1 Head Cauliflower, Riced (or 1 lb frozen Cauliflower, riced)
1 Can Diced Tomatoes
1 Can Diced Tomatoes
1 Jalapeno Diced
1 Onion Diced
Preheat oven to 400*
1 Onion Diced
1 Green Pepper Diced
2 Ribs of celery, thin sliced
2 Cloves of garlic minced
1 Kielbasa (I will put the legal brand next time I buy it)
Lemon Juice
4 Boneless Skinless Chicken Thighs (Season with olive oil, lemon juice, paprika, Cajun seasoning 1 hour to overnight)
Add shrimp or other proteins if you want
1 tsp Paprika for chicken, 1 tsp for 'rice' mixture
1 tsp thyme
1 tsp basil
Chile flakes to taste for spice
1 Tbsp Cajun Seasoning, add more to taste
Chopped Parsley
Salt & Pepper to taste
Salt & Pepper to taste
Preheat oven to 400*
Spread an even layer of the riced Cauliflower on a parchment lined cookie sheet.
Sprinkle Cajun seasoning evenly over cauliflower rice.
*Skip this step "Roast for 30 minutes" if using frozen, or just want your cauliflower firmer. I find softer veggies are easier on my stomach*

Take cookie sheet out and add drained diced tomatoes, onions, bell peppers, celery, minced garlic and mix well.
Lay 2 chicken thighs seasoned in empty spot on cookie sheet.
Roast for another 20 minutes.
Take out and Flip chicken
Add sliced kielbasa and roast for another 10 minutes.
Slice chicken and mix everything together.
Season with salt & pepper as needed and serve.
